The 1st automated dish room for commercial kitchens is here

as a solution that relies on AI, robotics and machine learning. In an interview, Linda Pouliot, who is the CEO and founder, as well Paul Birkmeyer, who is the CTO and co-founder, shared more.

Dishcraft's mission is to use robotics to improve the way that people work, and the company's first product tackles one of the toughest jobs in a commercial kitchen: dishwashing. It is comparable to the dishwashing steps in a traditional commercial kitchen with sorting, scrubbing, inspection and racking.

The Dishcraft solution starts with people dropping off the dishes in neat stacks. Then, the dishes are loaded into the robotic system. It uses process innovation to reduce the number of times a dish is touched by people and technology and to closely examine every dish before it is put back into circulation. Dishes are cleaned individually by a custom, engineered scrubber that is energy-efficient and water-conserving.
