Pickett has used AI to create a special four-course menu for his Northcote restaurant Estelle, with no chef interference with the menu. Toby Walsh, a professor of artificial intelligence at the University of NSW, says there are two factors limiting the use of AI in restaurants.“One is that, unfortunately, lots of people in restaurants are not very well paid, so putting expensive robots in is quite a challenge in terms of the economics,” he says. “You can find restaurants with robot service, but they tend to be a bit of a gimmick more than anything.
“Great art in the kitchen or on a gallery wall takes you to places you have never been before,” he says.
